Dr. Shawn Baker, Dr. Robert Kiltz & Dr. Lisa Wiedeman – Carnivore Doctors Panel
One of the highlights of the Steak & Butter Gang Carnivore MeatUp in Bozeman was the Doctors Panel featuring three of the most respected voices in the Carnivore and ancestral health space:
-
Dr. Robert Kiltz
-
Dr. Shawn Baker
-
Dr. Lisa Wiedeman
This intimate panel was packed with insight on how the Carnivore diet can restore health, reduce inflammation, and simplify nutrition back to its most natural, ancestral form.

🌱 Why Carnivore Works – “Your Body Wants to Heal”
The foundation of the conversation was simple but profound: your body always wants to heal. When we return to eating the way our ancestors did — meat, fat, and nutrient-dense animal foods — we remove the friction that modern plant-heavy diets can cause.
One challenge raised by the panel: Can you name one vegetable, fruit, seed, nut, or legume that grows everywhere around the world, all year long? The answer is no. But meat has been the one constant food that humans could always rely on for survival.
⚖️ Meat Has It All – Macros, Micros & Minerals
The doctors reminded us that there are only two essential macronutrients: protein and fat. Every micronutrient and mineral your body requires can be found in meat. Carbs, while non-essential, are often misunderstood. You don’t need them to fuel workouts or build muscle — your body can thrive without them.
💧 Fat, Lymph & The Detoxing Body
Dr. Kiltz emphasized the role of fat in the lymphatic system and how fat supports healing and detoxification. The liver, often misunderstood, doesn’t just detox but also produces fat to fuel the body.
Autoimmune conditions? Many stem from the foods we eat, especially plants that ferment and rot in the gut undigested — what Dr. Kiltz refers to as the “Instapot theory.”
🕰️ Patience & Healing
One repeated theme: patience. Healing takes time, and the body may go through temporary shocks while adjusting. For example, hair loss is not uncommon at first — it’s simply the body reprioritizing nutrients. Over time, many people even notice improvements in areas like eyesight and reduced inflammation.
☀️ Beyond Food – Light, Sleep & Movement
Healing isn’t just about food. The panel highlighted other pillars of health:
-
Red light and natural sunlight
-
Quality sleep and reduced blue light exposure
-
Hydration and movement
Supplements? Ideally, none are needed long term. They may help temporarily, but a properly formulated carnivore lifestyle should meet your needs.
🔑 Final Thoughts – Simplicity Heals
The message was clear: simplify. By eating ancestrally, prioritizing meat and fat, and giving the body patience and consistency, health will improve.
This panel wasn’t just about science — it was about reclaiming the way we were designed to eat and live.
